A Tale of Three Caramels

For over 60 years, Daffy Apple has been famous the caramel on our caramel apples.  Recently, though, we’ve been on a mission to fill a gap in the market for a cleaner label caramel.  What we found is that there are some different needs for different companies, wholesalers, and individual customers.  So we came up with three different caramels, Daffy Farms All Natural Baker’s Caramel, Daffy Farms All Natural Dipping Caramel, and Daffy Farms Dipping Caramel with Butter.  All three caramels are now available for purchase on the our website, as well as our Daffy Apple Traditional Daffy Apple Dipping Caramel and Daffy Apple Red Candy Dipping Caramel, and each has a slightly different usage and ingredient profile, so that hopefully we have a caramel to fit your specific needs!

Daffy Farms Dipping Caramel with Butter also features no artificial flavors or colors or preservatives like our all natural caramels, but in a more economical version than our non-GMO caramels.  It has the same hold power and homemade caramel taste as our original recipe caramels.  It is perfect for dipping caramel apples, marshmallows, pretzels and other desserts, it also works well in and on baked goods!

CAM01114-UseThe transition is almost complete!  The first batch of Daffy Apple Traditional Dipping Caramel in our new Daffy Farms branded tubs is sealed and cooling.  It’s the same recipe we’ve used for Daffy Apple Caramel Apples for over 60 years, the packaging just has a fresh new look!

CAM00751“The practice of coating fruit in sugar syrup dates to ancient times.  Honey and sugar were used as preserving agents.  Food historians generally agree that toffee apples (aka taffy apples, caramel candied apples, candy apples, lollipop apples) probably date to the late 19th century, although difficult to prove in print.  Both toffee and caramel are traced to the early decades of the 18th century. As we gear up our caramel production for fall, retailers are already thinking about Valentine’s Day!  Daffy Farms is featured in a piece by Bakemag’s instore magazine.  The article mentions Daffy Apple Red Candy Caramel and caramel apples as a unique choice for Valentine’s Day.  We are also featured in the July issue of Progressive Grocer, in a blurb about our new all natural products.

Unique Toppings

While preparing for the IDDBA Dairy-Deli-Bake Seminar & Expo 2014, we made over 170 gourmet caramel apples in order to showcase our Daffy Apple Traditional Dipping Caramel.  It was a fun experiment in which we learned which toppings work with both the flavor and the holding power of our caramel.

Cranberries are a topping we have used in the past and currently use on our Daffy Apple Premium Caramel Apples with Cranberries and White Chocolate with Milk Chocolate Drizzle.  Granola, though, is an entirely new idea based on an suggestion from a customer.  We used a very basic granola, but there are so many different mixtures that would taste excellent with apples and caramel.  We also added a white chocolate drizzle to a few of the granola caramel apples to take the taste one level further.

Sprinkles are a classic topping choice.  We have several color combinations available for order on our website, however for the show we did a few sports themed combos.  We are located in Denver, Colorado – bet you can’t guess which teams we chose!

There are a number of sprinkle-like toppings out there, too.  We only scratched the surface by including shaped decorettes and nonpareil pearls on this spring holiday themed caramel apple.  Go to the cake decorating section of any craft store and you will find a whole new world of edible sugars, crystals, and even glitter!

The theme of the expo was camping and so we took our favorite campfire tradition, S’mores, and turned it into a caramel apple by using graham cracker cereal, mini marshmallows and a a milk chocolate drizzle.  Most desserts, from pies to candies to pastries to frozen treats, could be translated into pieces and rolled onto a caramel apple.
