Unique Toppings

While preparing for the IDDBA Dairy-Deli-Bake Seminar & Expo 2014, we made over 170 gourmet caramel apples in order to showcase our Daffy Apple Traditional Dipping Caramel.  It was a fun experiment in which we learned which toppings work with both the flavor and the holding power of our caramel.

Cranberries are a topping we have used in the past and currently use on our Daffy Apple Premium Caramel Apples with Cranberries and White Chocolate with Milk Chocolate Drizzle.  Granola, though, is an entirely new idea based on an suggestion from a customer.  We used a very basic granola, but there are so many different mixtures that would taste excellent with apples and caramel.  We also added a white chocolate drizzle to a few of the granola caramel apples to take the taste one level further.

Sprinkles are a classic topping choice.  We have several color combinations available for order on our website, however for the show we did a few sports themed combos.  We are located in Denver, Colorado – bet you can’t guess which teams we chose!

There are a number of sprinkle-like toppings out there, too.  We only scratched the surface by including shaped decorettes and nonpareil pearls on this spring holiday themed caramel apple.  Go to the cake decorating section of any craft store and you will find a whole new world of edible sugars, crystals, and even glitter!

The theme of the expo was camping and so we took our favorite campfire tradition, S’mores, and turned it into a caramel apple by using graham cracker cereal, mini marshmallows and a a milk chocolate drizzle.  Most desserts, from pies to candies to pastries to frozen treats, could be translated into pieces and rolled onto a caramel apple.

Q&A Tuesday: What types of bulk caramel do you sell?

Currently, we sell three different types of bulk caramel: Traditional Caramel, Red Candy Caramel, and All Natural Baker’s Caramel.

34Traditional Caramel and Red Candy Caramel are dipping caramels, perfect for use in dipping caramel apples due to the way they coat apples in an even, beautiful, shiny layer and are sticky enough to hold onto a variety of toppings. They are great for other applications, too, like drizzling on desserts, using as an ingredient in recipes and sauces, and, of course, dipping things other than apples (bananas, pears, grapes, cookies, marshmallows, pretzels?!) Both are packaged in a variety of sizes ranging from a 20 ounce tub to a 5 gallon bucket.

106All Natural Baker’s Caramel was developed for, and is currently used by, grocery store bakeries for baked goods like cakes and brownies and cookies and tarts. It has a creamier texture and does not contain the sticking power of our other two bulk dipping caramels, so it is not recommended for caramel apple dipping. We are, however, currently working on an All Natural Dipping Caramel we hope to have available for retail sale by this fall. Our All Natural Baker’s Caramel is currently packaged in super easy to use 6.5lb microwavable tubs.

IDDBA Seminar & Expo

IDDBA_member_logoWe’re a member of the IDDBA!  What does that stand for?  International Dairy Deli Bakery Association! Every year the IDDBA hosts one of the largest food oriented trade shows in the country and this year’s event happens to be in our hometown of Denver, June 1-3, 2014. The show is only open to dairy, deli, and bakery professionals, however if you fall into one of those categories and are attending, be sure to visit us in Booth #4515!

Fall Internships

Do you need a culinary internship this fall?  Do you have what it takes to work in a caramel apple factory with some really awesome people?  Daffy Apple is now accepting applications for fall internships!

A little more about what we’re looking for . . .

Daffy Apple is a locally owned food manufacturer.  We have been based in Denver since 1951.  Our products include caramel apples, caramel popcorn, caramel in bulk, and other caramel related snacks.  Our customers include retailers, wholesalers, distributors, food service, caterers, restaurants, schools/universities, and individual consumers.

The position responsibilities include making caramel and other candy products in a food manufacturing environment following specific recipes, monitoring and cooking candy according to directions, cleaning prep and cooking areas, following formal food safety and sanitation programs, following temperature and weight calibration procedures, using in-house computer system to manage batches and ingredients, safely using and operating high capacity cooking equipment, following processes for traceability when recording lot numbers per FDA requirements.

The position also requires the ability to read, write and speak English fluently, accurately use Windows based recipe systems, lift 50lb bags of ingredients, stand in warm environments for prolonged periods of time, work in organized and clean manner, calculate mathematically in relation to scaling recipes and general kitchen math, measure accurately, read and understand directions, read scales for weighed ingredients, read thermometers, document results.

Culinary attire, background check, and minimum 1 year of commercial cooking or baking experience (restaurant, hotel, baker, manufacturing, or class/education program) required.

Generally our internships start in the fall, however can start as early as July if late summer employment is desired.  The hours are typically 11:00am-6:00pm, Monday through Saturday and our internships are paid!
