The big news for us at the IDDBA’s Dairy-Deli-Bake Seminar and Expo was the introduction of our newest product: Daffy Farms Rich & Creamy Caramel!

We found this fantastic round shelf that not only has an urban vibe, it reinforces the round idea of a caramel apple. This display, full of handmade gourmet caramel apples made with our Daffy Apple Traditional Dipping Caramel, Daffy Apple Red Candy Dipping Caramel, and Daffy Farms All Natural Dipping Caramel, turned out to be quite picture-worthy, judging from how many folks stopped to snap a photo of it!

IDDBA 2015: Part 1

Exactly two weeks ago today (Has it really been two weeks already?!) Daffy Farms was wrapping up the IDDBA’s Dairy-Deli-Bake Seminar and Expo at the Georgia World Congress Center in Atlanta, Georgia! Our second year as an exhibitor at this trade show that offers the newest, best, and tastiest dairy, deli, and bakery products in the industry, we featured our Traditional Dipping Caramel on over 100 handmade gourmet caramel apples, as well as our All Natural Baker’s Caramel on an assortment of gorgeous desserts, and debuted our brand new Daffy Farms Rich & Creamy Caramel, an 8 ounce tub of dippable, pourable, drizzleable, caramel ready to hit retail store shelves this fall!

Hotel Pic - UseAfter a long flight from Colorado, we made it to the ATL! There’s our hotel! Not the big one in the center, the little one on the left. We were across the street from SkyView Atlanta, a giant ferris wheel, which made us feel right at home, because, you know, caramel apples, carnivals, ferris wheels…

Sugars are found in the tissues of most plants, but are only present in enough volume for extraction in sugarcane and in sugar beets. Sugarcane has been cultivated in Asia since ancient times, with large scale expansion taking place in the 18th century with the establishment of sugar plantations in the West Indies and Americas. This was when sugar became more readily available to common people, as before the 18th century honey was generally used to sweeten foods. Sugar beets wouldn’t become a major source of sugar until the 19th century, when better methods for obtaining sugar from them were developed. Currently, the world produces about 200 million tons of sugar a year and each individual American consumes about 130 pounds, compared to an average of around 50 pounds per person for the rest of the world. A Tale of Three Caramels

For over 60 years, Daffy Apple has been famous the caramel on our caramel apples.  Recently, though, we’ve been on a mission to fill a gap in the market for a cleaner label caramel.  What we found is that there are some different needs for different companies, wholesalers, and individual customers.  So we came up with three different caramels, Daffy Farms All Natural Baker’s Caramel, Daffy Farms All Natural Dipping Caramel, and Daffy Farms Dipping Caramel with Butter.  All three caramels are now available for purchase on the our website, as well as our Daffy Apple Traditional Daffy Apple Dipping Caramel and Daffy Apple Red Candy Dipping Caramel, and each has a slightly different usage and ingredient profile, so that hopefully we have a caramel to fit your specific needs!

Daffy Farms Dipping Caramel with Butter Dipping with Butter

Daffy Farms Dipping Caramel with Butter also features no artificial flavors or colors or preservatives like our all natural caramels, but in a more economical version than our non-GMO caramels.  It has the same hold power and homemade caramel taste as our original recipe caramels.  It is perfect for dipping caramel apples, marshmallows, pretzels and other desserts, it also works well in and on baked goods!

Daffy Farms All Natural Baker’s Caramel Brownies

Recipe Yield: 12 BrowniesAllNaturalBakersCaramel6.5Large-Cropped for Blog

Ingredients

    1. Preheat oven to 325°F.
    2. Prepare 8”x8” square pan with foil and oil spray.
    3. In medium bowl mix together oil, sugar, cocoa powder, vanilla and salt.Brownies2
    4. Whisk in eggs one at a time.
    5. Add the 1/3 cup of flour.
    6. Pour batter into prepared pan.
    7. Put the 1 tablespoon of flour onto a plate for dusting the bottom of the caramel.
    8. Scoop Daffy Farms All Natural Baker’s Caramel out into ½ teaspoon portions and roll the into rope shapes the length of pan.
    9. Place caramel ropes onto plate of flour to dust just the bottom and place on top of brownie batter.
    10. Repeat 4-5 times while spacing ropes 1-2 inches apart.
    11. Bake brownies 25-30 minutes.Brownies5

As we gear up our caramel production for fall, retailers are already thinking about Valentine’s Day!  Daffy Farms is featured in a piece by Bakemag’s instore magazine.  The article mentions Daffy Apple Red Candy Caramel and caramel apples as a unique choice for Valentine’s Day.  We are also featured in the July issue of Progressive Grocer, in a blurb about our new all natural products.

This time last week we were right in the middle of the IDDBA Dairy-Deli-Bake Seminar and Expo 2014!  Our goals for the show were to introduce our new products, Daffy Farms All Natural Baker’s Caramel and Daffy Farms All Natural Dipping Caramel, as well as to promote our classic recipes, Daffy Apple Traditional Dipping Caramel and Daffy Apple Red Candy Dipping Caramel to top grocery store bakeries, dessert manufacturers, and product distributors.  The show was an overwhelming success and an invaluable experience, from the interest in our products to the industry connections to the distinguished guest speakers to the copious amounts of cheese samples!  We also snapped a few photos along the way, so we could share our experience with you . . . .
